A tasty meat-free meal
Everyone loves a burger, but not everyone loves to eat meat. Whether you’re catering for a vegetarian or just fancy whipping up a veg-centric meal, these mushroom and egg burgers are a delicious way to boost your five-a-day. Made using Yallamundi Farm organic eggs, they can be jazzed up with all your favourite burger toppings – think tasty cheese, pesto and even a fried egg. Sounds good to us – did someone say burger night?!

Ingredients
For the mushroom patties
- 2 cups chopped mushrooms
- 1 clove garlic, crushed
- ¼ cup chickpea (besan) flour
- 1 Yallamundi Farm Large Organic Free-Range Egg
- ½ – ¾ cup panko breadcrumbs
- Olive oil for cooking
- Salt and pepper to season
For the burgers
- 2 bread rolls
- 2 Yallamundi Farm Large Organic Free-Range Eggs, pan-fried to your liking
- Fillings of your choice such as pesto, rocket, tomato or cheese, relish and lettuce
Method

Pre-heat the oven to 200°C.

To make the patties, roughly chop the mushrooms and crush the clove of garlic.

Heat a large frying pan over medium-high heat and drizzle with olive oil.

Scatter in the mushrooms, season with salt and pepper and fry for a couple of minutes before adding the crushed garlic. Fry for around 5-8 minutes or until the mushrooms are golden brown.

Whisk one Yallamundi Large Organic Free-Range Egg in a bowl. Add in ¼ cup chickpea (besan) flour, season with a little salt and pepper and stir together into a thick batter.

Add the cooked mushrooms to the batter and stir well until all the mushrooms are well coated.

Divide the mixture into two and use your hands to press the mushroom mixture roughly into two round patties. Gently coat each patty in the panko breadcrumbs, pressing them into the surface of the patty so they stick well.

Place the patties on a baking paper-lined baking tray coated with a little oil. Drizzle the top of each patty with a little oil and sprinkle with salt flakes.

Bake for 20-25 minutes or until the patties are golden brown.

To build the burgers, cut each roll in half and spread with a little pesto or relish. Add some of your favourite fillings such as rocket and tomato, or cheddar cheese and lettuce. Add a cooked mushroom pattie to each burger bun and top with a fried egg.

Serve immediately.
