Broccoli and Feta Crustless Quiche

The perfect light meal!

Looking for a light bite? This simple broccoli and feta quiche is gluten-free, low carb and an easy-peasy dream to make – simply steam your broccoli, mix everything together and let the oven do the rest…

Makes: 2-4 as a light meal

Ingredients

  • 2 small or 1 large broccoli, or 350g broccoli florets
  • 85g goat’s feta cheese, crumbled
  • 6 Yallamundi Extra Large Pasture-Raised eggs
  • ⅓ cup milk
  • Salt and pepper for seasoning
  • Olive oil
  • 20g roasted hazelnuts, roughly chopped

Method

  1. Preheat the oven to 180°C. LIghtly oil a 30cm diameter baking dish with olive oil.

  2. Roughly chop the broccoli and steam in a steamer basket set over boiling water for 2-3 minutes, or until bright green and just tender. Remove from the heat.

  3. Whisk together the Yallamundi Extra Large Free Range eggs, milk, salt and pepper. Pour into the baking dish and top with the steamed broccoli, crumbled feta cheese and roasted hazelnuts. Drizzle with a little extra olive oil and sprinkle with salt.

  4. Bake in the oven for 25-30 minutes, or until golden and puffed around the edges and set in the middle. Allow to cool for five minutes before slicing.
